Recipe from Bob the Baker Boy IG
Makes 16 muffins
205g melted butter
200g caster sugar (reduced to 180g)
2 large eggs
160g milk
265g cake flour
3tsp baking powder
1 lemon (juice & zest)
Pinch of salt
90 pieces of blueberry (used frozen ones and increased baking time to 35min)
1) pre-heat oven @ 190 degrees
2) melt butter over stove until just bubbly
3) add butter to sugar and beat on Low until dissolved
4) add 1/3 milk, mix till incorporated; then 1/3 eggs and mix; then 1/3 flour and mix
5) repeat and mix until no lumps
6) add lemon juice and zest
7) use 12-muffin tin. Line and fill 2/3 with batter and blueberry
8) Bake in preheated oven at 190 degrees for 20-30 minutes or until top is brown
9) cool from 10 minutes before serving
10) batter can be kept in fridge for 2 days
